Ingredients
Chocolate Cake
150 g (1 1/4 cup) all-purpose flour
60 g (1/2 cup) confectioners' sugar
50 g (1/4 cup) brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 tsp cinnamon
1/2 tsp cayenne
1 tsp chili powder
45g (1/2 cup) cocoa powder
2 tbsp instant espresso powder
120 ml (1/2 cup) soy milk
240 g (1 cup) beet puree
50 ml (1/4 cup) oil
1 tbsp apple cider vinegar
Fudge Frosting
2.5 tbsp soy milk
50 g (1/4 cup) vegan margarine
2 oz unsweetened chocolate, chopped
180g (1 1/2 cups) powdered sugar
1/2 tsp vanilla extract
Chocolate Ganache
150 ml (5/8 cup) soy milk
1/4 tsp salt
113 g dark chocolate (70%), chopped
1 tsp vanilla
Vanilla Cake
140 g (1 cup and 1 tbsp) all-purpose flour
100 g (1/2 cup) sugar
1 tsp baking powder
1/4 baking soda
1/2 tsp salt
1 1/2 tsp apple cider vinegar
180 ml (3/4 cup) soy milk
60 ml (1/4 cup) canola oil
1 tbsp vanilla
Cranberry Filling
16 oz fresh cranberries
1 tbsp sugar
1 tbsp lemon juice
Vanilla Ermine Frosting
100g (1/2 cup) sugar
20g (2 1/2 tbsp) all-purpose flour
1/4 tsp salt
120 ml (1/2 cup) soy milk
1 stick of vegan margarine, softened
1/2 tsp vanilla extract
Food coloring, optional
Instructions
Chocolate Cake
Preheat the oven to 350°F. Line a sheet pan with parchment paper.
Mix the flour, sugars, baking powder, baking soda, salt, cinnamon, cayenne pepper, and chili powder in a large bowl.
Dissolve the cocoa powder and instant espresso in a mixture of soy milk, beets, oil, and vinegar.
Gently mix the wet ingredients into the dry until just combined. Spread the batter evenly on the prepared pan.
Bake the cake for 10-12 minutes, or until a toothpick inserted into the center comes out with a few crumbs.
Fudge Frosting
Heat the soy milk, sugar, and margarine in a small saucepan.
Pour the heated soy milk mixture over the chopped chocolate. Cover the chocolate for 5 minutes.
Mix the chocolate until smooth, then add the vanilla.
Taste the frosting and adjust the sweetness as needed.
Chocolate Ganache
Heat the soy milk and salt until just boiling. Pour it over the chopped chocolate and cover it for 5 minutes.
Uncover the chocolate, add the vanilla, and stir to get a smooth ganache.
Let the ganache thicken until it can coat the back of a spoon without dripping.
Vanilla Cake
Preheat the oven to 350°F. Line a sheet pan with parchment paper.
Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
Combine the vinegar, soy milk, oil, and vanilla in another bowl.
Gently mix the wet ingredients into the dry until just combined. Spread the batter evenly on the prepared pan.
Bake the cake for 10-12 minutes, or until a toothpick inserted into the center comes out with a few crumbs.
Vanilla Ermine Frosting
Combine the sugar, flour, salt, and soy milk in a saucepan and whisk well.
Heat the mixture and whisk constantly until it thickens to a pudding-like consistency.
Remove the mixture from the heat, pour it into a bowl, and cover the surface with plastic wrap to prevent a skin from forming.
Once the flour mixture has cooled completely to room temperature, beat the butter until it is light and fluffy.
With the mixer on a medium speed, gradually add the flour mixture one spoonful at a time. Make sure each spoonful is fully incorporated before adding the next one.
Continue mixing the frosting until it achieves the desired consistency.
Add the vanilla and adjust the sweetness of the frosting if needed.
Assembly
Cut the chocolate cake into equal-sized rectangles by bisecting the cake twice in opposite directions.
Stack the cakes with the chocolate ganache spread between the layers.
Frost the top and sides of the cake with the fudge frosting.
Cut the vanilla cake into 6 rectangles. Alternate stacking 4 of the cake slices and the cranberry filling.
Cut the layered vanilla cake into the desired shapes. Use the remaining vanilla cake to create any accessories.
Frost the vanilla cake with the ermine frosting. Place the pieces next to the chocolate cake.
Use chocolate chips or other candy to add details, and serve.
