Lemon Blueberry Mochi Waffles

Ingredients

  • 165g glutinous rice flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 50g sugar

  • 1 tsp lemon zest

  • 100g blueberries

  • 1 egg

  • 30g lemon juice

  • 100g soy milk

Instructions

  1. Spray the waffle iron with oil and preheat.

  2. In a medium bowl, mix together the flour, baking powder, salt, sugar, and lemon zest. Toss in the blueberries to coat.

  3. In a separate bowl, whisk together the egg, lemon juice, and soy milk.

  4. Add the wet ingredients to the dry and mix until just combined. The batter will be very stiff.

  5. Pour batter onto the preheated waffle iron. Spread the batter as best as you can.

  6. Cook each waffle for approximately 5 minutes, until the steam coming out of the iron slows down.
