Sourdough Pretzel Nuggets

Ingredients

Dough

  • 200 ml soy milk

  • 210 g sourdough

  • 360g bread flour

  • 1 tbsp sugar

  • 1 tbsp vegetable oil

  • 1 1/2 tsp salt

  • Food coloring, optional

Topping

  • 2 tbsp water

  • 1 tsp baking soda

  • Coarse salt

Instructions

  1. Knead the dough ingredients to form a smooth dough.

  2. For rainbow nuggets, divide the dough into 7 pieces, and use food coloring to dye all except one of the pieces red, orange, yellow, and green. Flatten each ball into a disc.

  3. Split the undyed piece into fifths, flatten them into thin discs, and layer the colors with undyed layers between them.

  4. Cover and let the dough rest for an hour.

  5. Preheat the oven to 350 F. Line a small tray with parchment paper.

  6. Roll the dough into a long, thin log, then cut it into 1-inch nuggets.

  7. Dissolve the baking soda in water. Brush the pretzels with the mixture on both sides. Place the pretzels on the prepared tray and generously coat them with coarse salt.

  8. Bake for 20-25 minutes or until golden brown.
