Tofu Sourdough Flatbread

Ingredients
300 g extra-firm tofu (1 package)
10 oz spinach
2 tsp salt
1 tsp baking powder
200 g sourdough starter
250 g all-purpose flour
100 g harvest grain blend
Garlic scapes, garlic, scallions, diced onion, or other add-ins, optional
Instructions
Blend the tofu and spinach together until smooth.
Combine all of the ingredients in a large bowl. Using a stand mixer or by hand, knead until a smooth dough forms.
Place the dough into a well-oiled bowl, cover it, and let it rise until puffy.
Generously flour a working surface. Split the dough into 8 roughly equal-sized pieces. Form each piece into a flat disc.
Cover the discs and let them rise until puffy.
Once the discs are puffy, flatten them into 1/4-inch thick ovals. Heat a nonstick frying pan.
Cook the flatbreads in the frying pan for 2 minutes on each side, or until golden brown.
