Tofu Sourdough Flatbread

Ingredients

  • 300 g extra-firm tofu (1 package)

  • 10 oz spinach

  • 2 tsp salt

  • 1 tsp baking powder

  • 200 g sourdough starter

  • 250 g all-purpose flour

  • 100 g harvest grain blend

  • Garlic scapes, garlic, scallions, diced onion, or other add-ins, optional

Instructions

  1. Blend the tofu and spinach together until smooth.

  2. Combine all of the ingredients in a large bowl. Using a stand mixer or by hand, knead until a smooth dough forms.

  3. Place the dough into a well-oiled bowl, cover it, and let it rise until puffy.

  4. Generously flour a working surface. Split the dough into 8 roughly equal-sized pieces. Form each piece into a flat disc.

  5. Cover the discs and let them rise until puffy.

  6. Once the discs are puffy, flatten them into 1/4-inch thick ovals. Heat a nonstick frying pan.

  7. Cook the flatbreads in the frying pan for 2 minutes on each side, or until golden brown.
